1/2 cup butter, softened
1 package yellow cake mix
1/2 cup coconut
1 – 20 oz. can apples (well drained) or 2 1/2 cups sliced, pared baking apples
1/2 cup sugar
1 teaspoon cinnamon
1 cup sour cream
2 egg yolks or 1 whole egg
- Cut butter into cake mix until crumbly. Mix in coconut. Pat mixture into a ungreased 9 x 13 pan, building up slight edges. Bake for 10 minutes at 350*.
- Remove from oven and arrange apples on warm crust. Mix sugar and cinnamon and sprinkle on apples.
- Blend sour cream and egg. Drizzle over apples. Bake for 25 minutes at 350*. DO NOT OVER BAKE. (Can use well-drained peaches also.)
