1 package frozen chopped spinach
1 cup grated Parmesan cheese
1 cup Stove Top Chicken flavored stuffing mix
3 eggs beaten
1/2 cup finely chopped onion
6 Tablespoons softened butter
Salt & pepper to taste
- Cook spinach according to package directions. DRAIN WELL. Mix spinach with remaining ingredients. Refrigerate overnight.
- Roll into 1-inch balls and place on a cookie sheet. Bake at 350* for 10-15 minutes. Unbaked balls can be freezed, thawed then baked.
