2 cups flour
1 1/2 cups sugar
2/3 cup butter
2 teaspoons baking powder
1 teaspoon salt
2 egg yolks
1 cup milk
2 egg whites
1-2 cups fresh blueberries
Directions
- Mix flour, sugar and butter like pie crust. Save 2/3 cup for topping.
- To the remaining flour mixture, add baking powder, salt, egg yolks and milk. Beat for 3 minutes.
- Beat egg whites until stiff but not dry. Fold into flour mixture. Place in a greased/floured 8″ x 12″ x 2″ glass dish. Top with blueberries. Sprinkle with remaining crumbs. Bake at 350* for 35 minutes.
